2. Prepare the Meat
For the best Cebu Lechon experience, we recommend using high-quality pork between 30lbs and 80 lbs. Cooking a whole pig can be challenging, so if you’re looking for a professional, don’t hesitate to use our map to find someone who can help with the cooking process.
3. Season Generously
Rub the Cebu Lechon Seasoning thoroughly over the entire inside surface of the meat, ensuring even coverage. We recommend slow roasting the shoulders and ham roast until the internal temperature reaches 200°F or more. This ensures the meat is fall-apart tender while still locking in all the seasoning’s rich, savory flavors. Use the included butchers twine to close the belly and neck to keep the seasoning inside!
4. Achieve Crispy Perfection

Aim for a skin that is thin and easy to eat, yet perfectly golden and crunchy. This technique works especially well with pork belly and whole pigs when cooked over open flame or in an oven. We generally cook the whole pig at about 250°F to 300°F throughout the cooking process. Keep an eye on the skin and adjust the height or amount of coals to prevent burning and crisping the skin too early. Sometimes a wet rag can be used to clean the skin and also cool it down if it get too hot. We want to bubble the skin, not burn it.
